What a wonderful Sunday! The weather was beautiful, we got lots of work done around the house, and then enjoyed a delicious meal.

Derek cooked a beef roast on the Weber and we made a tinfoil packet full of potatoes, onions, and butter. The salad is romaine lettuce from our garden, strawberries from a local roadside stand, and then a little bacon, feta cheese, and a homemade poppy seed dressing. I hadn't planned on taking a picture of my plate, and didn't notice until afterward that it has a chip in it :) We've been eating this salad for a few weeks now, but with spinach (which is done now, I didn't plant very much) from the garden instead of the lettuce.
Poppy Seed Salad Dressing Recipe
(makes about one pint)
1/2 sm. onion
3/4 c. sugar
1/2 tsp. dry mustard
1 tsp. salt
1/3 c. vinegar
1 c. salad oil
2 tsp. poppy seed
Place onion in blender and chop. Add sugar, dry mustard, salt and vinegar to onion; blend well. Add salad oil a small amount at a time and blend well after each addition. Pour into jar or container and add poppy seed. Refrigerate. Shake well before pouring over fresh spinach and sliced strawberries.
Also, Sunday was my niece, Lilly Lee's, birthday. Can you believe that she is already SEVEN years old?! We love you Lilly!
